It's straightforward to grow Winter Spinach from seeds. The seed should be sown very thinly in drills 1.5cm deep and 30cm apart. It takes 12-20 days for the seed to germinate. When seedlings are large enough to handle thin to one every 7cm and then again three weeks later, to one every 15cm, during the micro-leaf and baby leaf stages, the thinnings can be eaten. Alternatively, you can start in early spring when the soil temperature is over 14 degrees celsius. For fall harvests, plant-heavy seeded rows every 10-14 days in mid to late summer, 30 seeds per foot.


To prevent bolting, ensure the plants are well hydrated, particularly during dry periods. Regularly pick leaves to ensure new growth and continued leaf production. The best growing conditions are fertile soil amended with compost or well-rotted manure—plant in autumn and cover with mulch to ensure a spring harvest. You can either start them inside or transplant them later, but they are not recommended. Since winter spinach requires little care, you can start them outside and harvest them after one to two months.
